For me, the main attraction is the relationship that is fitted into the main plot so you get conversations and flirts related to what is going on, and spread out through the entire game, not just a dozen or so pez-dispenser talks by the fire/on the ship ending when they sleep together or decide to get married or not. In most games, I can pretty much see my character going: "Single? Me? Oh, no, no. I have a boyfriend/husband, and a very good one at that...." snaps her fingers. "Darling, step forward. There you go, a boyfriend/husband. That un'."
I really had a blast in SWTOR when my Smugglers had multiple love interests, each attached to the main story-line on the planet. On the other hand, I really loved it how Anders' romance in DA2 had him commenting on the events referring to his love for the PC. Legacy DLC was awesome in acknowledging their relationship.
If one LI could have had the content connected to the story all the time (like Anders), on every planet and at plot important moments, I'll happily go with that. Otherwise, someone new, and plot-related, in every (second) port will be my preference if it's what bio writers prefer to do.
If neither is available, I will go back to the One True Love and fill in the gaps, the way I have to do it in Inquisition.
I also am in favor of all romances being player-sexual. It's a game convenience, it was done well in DA2, and most players can handle not clicking the heart option if they don't want to just fine.
All and all, I want a romance that is worth all that talking about it and choosing it, and making a character for it.... To date there were very few that imo lived up to the fame/infamy.

I understand that not everyone's tastes are being satisfied. But I'd rather have a few focused romance options, like Tali, Liara and Garrus. rather than a whole bunch on the level of Steve Cortez, Traynor, Samara. etc.

But since part of quality is in depth characters who aren't all bisexual, quantity will inevitably happen or else many groups won't be represented I thought bisexual romances were excellent in DA2 and playersexuality was accounted for, and was awesome to just create the character of whatever gender and see which one you liked the best, instead of starting a replay. It was particularly obvious for me when I started DA:I after DA2. Reroll after 12 hours of playing was sad. It's so easy to get used to a good thing, and suddenly dealing with: oh, she is a wrong race for this man! And for this! And a wrong gender for this! All the good ones are special, apparently. At least the protagonists in this game don't have to deal with "do I play the race I love or do I get a chance to check out the most interesting romance?"

Quantity since quality doesn't often exist without quantity. I doubt we would have gotten Thane, Legion and Kasumi as squadmates on ME2 if Bioware focused on quality- they would have probably just focused mostly Miranda and Jacob and their romances then. What is point of quality of it's not quality you like?
Sure I'd take one really good quality Garrusmance over 10 LI's like Garrus without much content- but I wouldn't take one really good quality Kaidanmance over 10 LI's including Garrus without much content.
So my point is: There needs to be quantity that quality can exist.
