I recently started a Mass Effect story that takes place 600 years after the events of Mass Effect 3, ie. roughly the same time as the events of Mass Effect Andromeda. One of the reasons I finally decided the 600 year route is because it finally gives me a chance to picture what would happen to the galaxy after the war without having to worry too much about continuity with so many different playthroughs. This thread will be reserved for me explaining what happened to certain characters or events during the 600 year gap, and will be updated often depending on who requests what. If there's a particular character or event you want to know more about, please let me know and I'll come up with something for this thread.
Let's start with Garrus Vakarian. Note that this assumes Garrus survived both Mass Effect 2 and Mass Effect 3.
Following the Reaper War, Garrus kept true to his promise to Shepard and retired early. If Garrus romanced Shepard and she's alive, then they both settle down, away from military life. But even though he retired, Garrus didn't feel like he was done helping the galaxy, so he would spend the first few years of retirement rebuilding Palevan, and then (if Tali survived) assist with rebuilding Rannoch.
If Garrus romanced Shepard and she's alive, the two would end up adopting a young turian boy as their own. If Garrus didn't romance Shepard and Tali was alive, they would be a couple for a good solid decade, adopting a young turian son. However, with Tali wanted to put more focus on helping Rannoch, the two end up breaking up. If neither were alive, Garrus would end up meeting a turian scout lady and after a couple years of dating, they end up marrying and having a son.
Garrus passed away in 2249, and his son continued his father's legacy as a top ranking member of the Turian military.
After roughly 200 years of high reputation, eventually along came Kerrick Vakarian, who notoriously lead his entire platoon to their deaths and emerged as the only sole survivor. Since that incident, the Vakarian name was now a respected, but blacklisted name, and many of the following descendents vowed to stay away from the military. But for the few that didn't, they were never given the potential to reach Garrus' status, often times being sent on crap assignments. This military tradition continued until 600 years later, when Lt. Gina Vakarian's story began.
