If you already have an Xbone, there's no reason to get an Xbone S.
Regardless of the system, 4k will be upscaled either by the TV in regards to the original unit or by the console for the One S. It won't be a true 4k picture.
There's little reason to upgrade unless you really want a smaller box in a different color.

The Xbox One S does not play games natively in 4K, but will upscale (?) to HDR. Xbox Scorpio will play games natively in 4K but isn't out until probably Holiday 2017. So MEA will look better on One S, but won't be in 4K. I don't think there are plans for a 4K version of MEA for Xbox even when Scorio comes out, but I could be wrong on that.

I would wait till Scorpio. If your gonna upgrade, might as well just hold off till later this year and 'really' upgrade. The only exception to that is if you have more then 1 room with a 4K TV and you want a 4K bluray player for the secondary room (or where you might watch movies that you may not also play games at normally?).
Basically if you don't have a separate movie watching area vs your gaming area (most don't) then wait till Scorps, it's out this year and it's a hell of an upgrade compared to the minor CPU boost + 4K bluray player the S provides.

HDR only matters if it's a newer or higher end 4k TV. If OP has one of the older models, they're not going to get anything out of HDR, especially if ME:A lacks support for it at default. Forcing HDR won't be as detail or color rich as native HDR.
