Ive noticed 2 things about multiplayer and i havent seen any posts about them.
#1: Bullet Damage. I unlocked the vanquisher today and, well, its great. Most of the time I can 1-shot Chosen/Raiders/Assemblers to the body no problem on bronze. But other matches it will take 2 body shots or a headshot to kill, and other enemies seem to take more hits as well. Same difficulty. I run the same kit every match. Nothing changes except for the host.
#2 Weak Points. The hit boxes for weak points/headshots are very inconsistent. Mostly on Observers and the Mid-range Kett, but Ive also noticed this on other enemies.
Anyone else noticed this? Or maybe have some kind of logical explanation?

Some missions have a modifier where one weapon type does extra damage and all others do less. For example, today's gold mission was +50% shotgun -50% everything else (I knew those shotguns were too good to be true). It's possible the mission you were in was similar and had decreased sniper damage. I'm not sure what the bronze mission's modifier was today.
As far as hitboxes go, I'm not sure. I do feel they're a bit wonky at times, but at the same time my aim is probably wonky as well. Not a huge issue with them though.
EDIT: I have noticed some damage inconsistency occasionally though, but I usually chalk it up to bad luck/back aim.

Yes, there is damage inconsistency. Although this might be partly attributable to your second point, as the outsides of heads no longer seem to count for headshots, you seem to have to be closer to the center to get the bonus damage.
It isn't even just across matches, so it's not a matter of match modifiers due to Apex missions. Within the same bronze game I can kill a Kett Chosen with a Viper headshot, then require 2-3 headshots on another Chosen twenty seconds later. Quite bizarre.

But the modifiers wouldnt make sense to my first point. all the matches i mentioned in #1 were from today. Some matches, One hit kills. Other matches, 2 hits.

I'd be inclined to say it's bad lag compensation (at least the #2) but it's Frostbite and I'm pretty sure Bioware didn't mess with the built-in netcode in that regard. Also, it wouldn't explain #1 unless there's a mechanic like grazing shot now. In that case it could be attributed to lag comp as well.
