I know I'm in the spoiler section, but if you could refrain from spoilers on this: I have the option to go after the Archon. Is this a pivotal / no turn back mission? I have a lot I haven't done. I feel like it can't be considering how early in the game it became available. Please no spoilers. Thank you!

The final mission has a pop-up box that lets you know there's no turning back and gives you the option to cancel and finish up other side quests. If you don't get that pop-up box, you're fine.

Right at that point, I got bombarded with like a dozen quests that were on hold... loyalty missions, other Arks, etc... is any of that time sensitive in regards to doing them before/after finding the Archon's ship?

I double checked online guides to be sure before answering this. Assuming you're about to start ... (No spoilers other than mentioning the name of the mission for clarity.) "Hunting the Archon."
The guide says that "the team meeting on the Tempest is going to introduce you to two new priority ops missions. They’re obviously more important than side missions, but they’re still distractions. And, despite how everyone makes it sound, you don’t have to do them first." So it sounds like you can do the Archon's ship with no problem. I'm not aware of any time sensitive missions.
And loyalty missions will still be available even after you beat the game. However, the main missions are what progresses the romance paths if you want to get caught up with your LI before moving forward. (Peebee's loyalty mission bugged out on me and it's still available even after I beat the game. I assume when it's patched I can pick up where I left off and complete it.)

The point of no return is the following mission (I forget the name). I'm thinking about trying this when I play through again.
Do the main story up until the point of no return...THEN doing all of the side content. In theory that should unlock all of the gated and timed quests and allow you to go straight through most of them with minimal "ON HOLD".

That would be interesting. There was one early quest that I "failed" to do in time. Very minor, still not sure how I lost it, but no biggie. It was that reporter on the Nexus. I never got back to her. Mission eventually listed as "failed" when I progressed the main story. She got replaced by some guy that wanted me to put receivers on different planets. Or maybe he's a separate quest, dunno.
Just FYI.

It's more of the middle than the ending. I also started finishing up on everything else before doing it, but you might want to save some stuff for after. Especially squad mate missions feel more natural spread out.

I do have to say that the game kind of DOES make it feel like the ship mission is late end game stuff when in reality it's really not, way closer to mid

I believe there are two missions after "Hunting the Archon". The next one is Journey to Meridian. This not the point of no return either. The point of no return is the following mission (I forget the name). Meridian: The Way Home.

I do have to say that the game kind of DOES make it feel like the ship mission is late end game stuff when in reality it's really not, way closer to mid It can be. Only about 20% of the missions cannot be completed until after finishing Hunting the Archon and/or Journey to Meridian. I think that that 20% is probably high, too, because the game weights crit path completion a lot more heavily than secondary op completion. But if you're an idiot like myself and immediately abandon crit path as soon as you get Vehn Terev's information, the mission ends up being pretty late-game.

I regularly abandoned crit path, but after what felt like a neverending slog through Havarl, Voeld and Kadara I said screw it and went to Archon's ship before even touching Elaaden, H-047c or any Loyalty missions or other main Allies quests, I really wanted to just move the progress on main story already

I recommend doing the turian ark and Cora's loyalty quest before that. Or at least before the follow-up quest on the nexus.
