While I do agree that there could be some better organization of the crafting system/menus, I don't see the example you have given as a much better alternative. Since the a change in the "scope" or "barrel" is not really what people are looking for, but mostly overall stat changes and effects, having a system where you choose like in the video above would be overly complicating the process.
I do think additional categories and submenus would help immensely, though.

I prefer the fall of cybertron style upgrades combined with precious metals.
Add Nickel get 5% extra damage etc.
Pick a slot to unlock.
Assign metals.
Gain bonuses.

I hated Resonance of Fate's menus.
And I think most of MEA's crafting is fine. It just has a few rather crucial flaws that keep it from being good.
I'd rather it than any of MET's stuff. ME1 was on a track I liked but it did it the most horribly. ME2 was way too simplistic for my liking. ME3 was more interesting with its simplicity, but I still didn't have enough to customize and advance.
MEA has it almost all there but without the necessary passes (like most parts of the game) to make it shine (beyond its 7-8/10 status to a 8+/10 one). I'm cool with menus and blueprints, just give me more helpful menus and less blueprint bloat.
Game could also do with a little better loot drops so people feel a little less need to craft. I'm A-OK with crafting here, I even love some of it, but I do understand it can be a bummer for many to be introduced to this system they don't want to touch, and then as they advance, feel like they're being pushed into something that is going to be essentially unfun for them (crafting in general).

I like the crafting in MEA. I get to make custom weapons and armor. Why would people hate that? The UI could use some work, but overall it is not that bad.

I hardly ever craft stuff in games, however I pretty much got all my active stuff from crafting in ME:A. I liked that I had all the schematics available, instead of having to find those in some random place and possibly find them useless. Getting resources for both elements didn't feel like a hassle either, I wasn't in any way thorough in trying to get it, and was able to craft everything I wanted.

This particular crafting looks like some jigsaw puzzle that you need to spend hours and hours in so that you can get the maximum damage. And even if you have a guide that says 'MAX DAMAGE PISTOL POWER OVER 9000!!!', I bet you need like ten minutes to mix and match the stuff.

I don't think the crafting system in Andromeda is bad at all.
I think the way it's presented, and it's awful UI, are the real issues here.
The crafting menues are awful. Whether it's research or development, the menus are so unnecessarily complex, convoluted, and lacking in common sense. TotalBiscuit really makes some great points when discussing this in his review.
Had they just simplified the menus, but kept the same systems in place, crafting would have been fantastic in this game.
As it is though, it's just a big mess.

I wish they had an option to directly upgrade the weapons/armor you are carying. It's very tedious to have to switch everytime.
