I read the following link, which helps with a lot of future gameplay with levels and difficulty of enemies.

My question is, even if the enemies are harder after you hit level 80 (not the level cap but the cap in which enemies become stronger than you) will lowering the difficulty be easier? I would rather enjoy the gameplay than get frustrated dying so much on insanity.

Keep in mind that many of the percentage based increases from abilities are based on the overall amount of points put into that tree. For instance: With only the first level of OFFENSIVE BIOTICS, there is a 2% increase to biotic damage however; with a maxed BIOTICS tree (252 points), that 2% becomes 40%.
So getting to level 80 doesn't necessarily mean you've hit a brick wall in terms of progression.
Many of the weapon damage increases work the same. So your weapon damage will continue to climb until you've completely maxed the COMBAT tree. Same goes for the TECH tree.
Also keep in mind that profile bonuses are multiplying your already multiplied stats.
