Does anyone know how damage resistance works in this game exactly?
Right now my educated guess - but still merely a guess - is:
actual damage taken = damage / (1 + DR/100)
This conforms with the requirement that 100 DR cuts damage in half, and it seems sensible from a game design perspective (nice diminishing returns), but Biower being Biower, all bets are off.

Seems about right. The ingame loading screen says it's a scalable model, and that 100 rating will mean taking half the damage.

There's a post on reddit about it now.
100 DR = 50% reduction in damage i.e. double your effective hit points
200 DR = 66.6% reduction in damage i.e. triple your effective hit points
300 DR = 75% reduction in damage i.e. quadruple your effective hit points.
This corrects the flawed mechanics in ME3 where you could be invulnerable if you had 140% DR, something that the batguard, kroguard could achieve quite easily and was in reach of the krentinel, justicar and a few others. (Why 140%? Because reasons. If you want a full explanation come find me in 2013.)
