Bit hard to explain, but basically I had only my equipped rank 1 N7 armor in my inventory, and no other armor to wear in it's place - but I wanted the rare augmentations I'd put into the N7 for use in the next set I crafted.
Unfortunately, the only method of retrieving these augmentations that I am aware of is deconstructing the armor in which they are placed.... and because I didn't have any other armor available to put on in place of the N7 armor, I was unable to deconstruct it - because I was wearing it. You can't just take off your armor, you have to have another piece of armor to equip in place of it.
So, am I overlooking something obvious here, or is that the way it works?
In the end I was forced to waste resources making a cheap set of Initiative armor, just to temporarily equip in place of the N7 - grrrrr. This left me with insufficient copper, and the merchant had none for sale - forcing me to land on Voeld and grub around mostly depleted mining nodes until I had enough'.
It's a tough life being a Pathfinder at times.

But after crafting rank after rank of Revenants, Black Widows and N7 armors, my resources are starting to look pretty thin, especially copper and omnigel canisters. Luckily I have regular mineral and tech deliveries from AVP perks, so it should hopefully be a temporary situation.

You'll quickly rebuild your crafting reserves, ergates. It sounds like you may have a huge amount of game left before you. There's no shortage of resources, after you reach a certain point of character and story advancement. I don't mind that augmentations are intrinsic to the armor. It makes sense that they aren't removable, modular upgrades. That's the definition of "mods". In your case, I'd have maybe waited to desconstruct until after I'd recovered alternate armor in the field. At the rate I find this stuff, it wouldn't have taken long. Crafting weapons and armor is expensive, in terms of Research Points. It takes a while to really build a diverse armory via crafting. I only update my armor every 20 levels, rather than every 10 levels. Soon this will be irrelevant, for my current character, as the last few pieces of my gear will all be Tier X.

Yeah, lesson learned. I'll definitely keep a second set of armor in reserve in my next playthrough. Still, it's a new game, I'm still learning it's systems, mistakes like this are inevitable on the first playthrough.

You can get your augmentations back if you break down weapons and armor? Ahhhhhhhhh! I didn't know that. I assumed they're like runes from DAI.
