I know that the devs said that you can still complete "most" of the other quests after the main story line, and the ones you can't "are for obvious story reasons". I'm wondering what quests can not be done after the main story.

Anything on the Hyperion should be done before the game ends, and though some have said otherwise, it's best to complete the memory fragments for Ryder's family before the game ends too. Loyalty missions and other stuff can be done after, but not doing Cora's before the game ends can cause fatal consequences.

I recommend saving Movie Night (at least the actual movie viewing itself) for post-ending.
