I forget are you playing as male shep? if so most of the romances are easy to avoid as long as you don't go for obviously flirty choices. Jack's is a bit more confusing though. There comes a point early on where you can ask her about 4 different things (one is her tats I believe). If you ask her about more then one of those things you enter into a quasi relationship and have to end things with her. The rest should be fine, though Tali you might have to turn down if you talk to her too much as well-though she doesn't take it too personal.  I don't know the female playthrough as well, but I don't remember there being any standout landmines to dodge.

You won't accidentally romance anyone.  You can do some flirting but you won't end up in bed together without wanting it to happen.  I've been flirting with Kelly, even had dinner with her, but I think that's where it's going to stop.  Don't want to cheat on Kaidan when we're reunited in ME3.
