Okay two things:
1) It appears you can rewrite your import on the fly. I mean, I imported a character who did not do the White March DLC, and which Eder joined the Night Market. I subsequently played around with the create-a-story import features, creating a world-state where Eder became mayor of Dyrford and the White March was completed.
Now I've met Adaryc (and apologized for losing his sword with the destruction of Caed Nua), talked to Palegina about Maneha, And Eder has told me the story about how he became mayor, despite already telling me how he joined the Night Market!
2) I went and did every quest I could find in Neketaka that wasn't red to me, and I'm 9th level. How overpowered am I to actually start doing quests that require sailing to other ports? I haven't even done Fort Deadlight yet.

1) I'm not sure I understand. You either load a save or pick a custom legacy you created when the dialogue popup at the start of the game. Playing with the custom legacy maker shouldn't affect a current playthrough, that would be a bug. Edér Mayor vs Night Market is a known bug, some of it was fixed in the first patch, maybe not all of it.
2)You'll be fine, although Fort Deadlight might be easy, I did it right off tutorial island, as does some of the bounties from the dude at the Wild Mare. Personally, I don't think you should "clear" everything at Neketaka from one go.

It's possible White March is considered "done" regardless if you did it or not because there is nothing in the save in relation to starting it. You can't say you haven't done it in the custom legacy either.

I tried to find some gameplay videos with someone doing this but no luck yet. You confused Iakus by mentioning the first game. The Critical Role Pack is just a voice pack with portraits. The voices are "in-character", that include reference to the character names. I heard a few people using them, but not much more then that. You also need to make a full adventurer party to make it work.

So just wondering what builds and party set ups people are using? Rogue/Fighter is literally called Swashbuckler but it would work with a single class too (rogue, fighter, even cipher if you don't mind some weird powers or ranger if you want a pet). Everyone can use every weapons, it really depends more how you want to play your character. I don't think there is any "must have" party composition, but you are going to want someone who can heal/buff (Paladin, Priest, Chanter or Druid), someone to tank (Paladin, Fighter, Monk) and damage dealers (any classes can do this). My party for most of the game was: MC: Skald (chanter sub-class, melee oriented, build for support via chant and CC/damage dealing via invocations) Edér: fighter (tank) Pallegina: paladin (off-tank) Aloth: wizard (mix of cc and damage dealing spells) Maia: ranger (give her a gun and watch her kill things)

Also, while you do not need a Rogue to disarm traps and open locks you DO need someone with the Mechanics skill. Good news is anyone can learn it! (Some classes - including Rogue - have a starting bonus, but if you want your Fighter to be the guy who opens locks that's completely achievable in the long run.)

Something tells me I'm not technically supposed to be exploring these Old City Ruins in Neketaka as soon as I come across them, even if I can access the area already. Same goes for the crypt area you can rappel down to in the...I want to call it the Temple District, but that's BG2. Sacred Stairs? Something like that. Anyway, in both areas I managed to clear everything else with a bit of trial and error, but the bosses in both seem quite literally impossible at my level (7-8). Also that one fight where you get swarmed by undead as soon as you loot a corpse with a nice looking sabre completely overwhelms me at this point. Maia also seems to want us to have some kind of...arrangement. Which is fine, but a bit out of nowhere considering how little I've had time to talk to her prior to her all but blurting out that she wants to fuck the Watcher. Are the companion affection systems bugged or something? This seems similar to my earlier experience of Xoti blowing up in Pallegina's face immediately once they were in the same party. Because both conversations seems like they should only be triggering after getting the relationships to a certain level, be it either Watcher/Maia or Xoti/Pallegina. Before that, there hadn't been any conversations with her even available beyond the dialogue options you can already go through immediately as she joins. Where do you find a Principi flag?

I'm trying to be clever for Serafen's quest where I'm supposed to sneak into some pirate haven to deal with the guy who attacks you in the game's opening. He suggested the black market in Neketaka as a place I might find one, but none of the merchants in Delver's Row seem to have one. We could say that the affection system is bugged. You and they gain disposition with each others too fast and some flags (romance, Xoti's anger) trigger basically as soon some points are gained instead of at "-2/2" (the max). That problem also seems to cause another side effect: some conversations never trigger because you skip disposition to fast from the looks of it. Also, Aloth has two conflicting dispositions in one of his possible POE1 ending state, it's almost impossible to get him above or below 0 (some managed -1/1) when he is like that. I think that will be fixed in 1.1 (early June). For the spoiler, you can get one by attacking and boarding a Principi ship, that's how I got mine not far off from Fort Deadlight. It's also a reward from finishing Dereo's quest if I remember properly.

So what level abilities of each class do multiclass characters get access to?
Also in regards to Ranger I have to wonder why intelligence is tagged as a recommended stat? As far as I can see it only effects will saving throws and area of effect spells, am I missing something or are the recommended stats tags taking the piss?

Classes affect base hitpoints and gained per level, base deflection and starting skill bonuses. The fextralife wiki has tables with all the info (I didn't check if the data is still accurate), if you click on a class you'll see their values for multiclass combos. In term of leveling up, on new power level you have to pick one ability in each classes you have access too (i.e. unlocked power levels), on not new power level you get 1 talent point you can spend in either classes. Multiclass unlock power levels more slowly than single class and top at power level 7 (they do not access power level 8 and 9 abilities). Intelligence for Ranger is only good for a few abilities that have duration affects, that include the Ghost Heart pet summon. I personally suggest going pure Ranger instead of using a subclass. The subclasses aren't that good except Stalker if you plan on doing a melee-tanky-ranger or Ghost heart if you just hate the pet and never plan on calling it. I'm still jealous that Maia has such a good kit...

Just another question in regards to party composition, I remember in the previous game I kind of ignored the companions of that game and created my own custom party because I did not particularly like their default stats and did not find them or listening to their long winded life stories particularly interesting, just wondering what the dealio with companions in this game is? Is it better to go with the pre-defined companions or create a custom party? Do I miss out on much not having the companions along for the ride?

It feels like this has been a strangely quiet release. Is this normal for this kind of game? Considering how the first Pillars has become fairly well-known, it is surprising to see how little attention this game seems to be getting with videogame sites. That being said, I don't look at many, so maybe the ones I visit just aren't mentioning it much.
