So, when we first meet the Kett on Habitat 7 and the Angara on Aya, we can't understand a word they say. Which makes sense, considering they're entirely new species for us. And yet, some time later we run into the Archon and we understand him; we run into Jaal, and we understand him. Why is that? Did I miss something?

And yet, some time later we run into the Archon and we understand him; we run into Jaal, and we understand him. Why is that? Did I miss something? If I am not mistaken, here is the reasoning for each species explaining why we can communicate with them. Angara: Keep in mind that the outpost on Kadara has been established for several months prior to the events of MEA. The Angara have already made contact with the people of Kadara. Their experiences with the newcomers weren't the best, which explains why the Angara government seems a bit cold when you first meet them. The reasoning goes that in the few months that Kadara was set up, individual angara and Milky Way species exchanged technology and culture, including language. As Milky Way species travelled around the Helius system, that information would get passed on/traded. It would make sense that the Angara already have that technology on their homeworld by then, hence explaining why we could understand them. Kett: My reasoning is that the Kett have already come into contact with Milky Way species by abducting them for "study" (aka exaltation). I suppose it would make sense if after studying them for several months, that the high level members of the Kett hierarchy would understand how to communicate. As for how Ryder can communicate with these species upon first meeting them, well there's SAM. Keep in mind he's able to decipher the console on Habitat 7 that's coded in a completely new language in a matter of minutes. It wouldn't be too much of a stretch to say that, after a few encounters, he is able to process their speech and make it understandable.

SAM MacGuffin, because that's his role. And, after all ... Angaran language is synthetic, just like they are, and probably have some kind of relationship to Remnant.

Back when this game came out I might have said 'Space Magic' and posted some gif or other, but as a collective group of Mass Effect fans I think we have larger issues to worry about right now.

Besides having a supercomputer that partly lives inside our head as well as regular translation software, the reasons are as said above the Angara had contact with the Exiles for several months and the Kett for nearly a century. So when we meet them, they are able to understand the languages and then through them we learn the languages of the Angara and Kett.

Because this is a science fiction video game and it is a sci fi staple which makes sense because you want your audience to understand the characters on screen. This is a trope that sci fi only seems to be fully getting over recently (look at some of the recent stuff in Trek and SWs)
Though in universe correct me if I am wrong but we do not decipher the language on habitat 7. We only do so upon getting to the Nexus and the Nexus has had contact with the Kett for a lot longer and hell I think we still do not start really understanding the language until after that. Shortly after but still. Oh wait if my memory serves its not really until the Archon nearly captures us that we hear the Kett speak 'English'.

Because it's science fiction, and the "universal translator that can immediately make sense of any alien language" is a must.

Plot convenience and space magic. ....which pretty much describes SAM. When SAM was able to immediately interface with the alien technology on Habitat 7, I got flashes of the movie "Independence Day" when the heroes are some how able to plug a regular human laptop into an alien computer system to send it a virus.

Yeah, SAM is just kinda of awful. He's such a blatant magic wand to move the plot along that it actually hurts the entire narrative of MEA.

So... SAM can apparently translate an entire language from just a few words? The Angara had met the exiles already, and the Kett had already encountered and experimented on Milky Way species a number of times, so it makes sense that they'd know what we say. The Initiative, however, should not have enough information to develop a proper translator. The Kett almost never speak, and they always attack on sight, while the Angara didn't have any relationship with the Initiative prior to Ryder's arrival on Aya (hence why we don't understand the Angaran pilots when they first spot the Tempest).

Can you imagine hours of "Geh baba latto. Kee foo nada bech" and our character having nothing to respond with? I suppose this really could have been introduced more organically, but I think it would also have served better if first contact on Aya really was first contact.

Because it's science fiction, and the "universal translator that can immediately make sense of any alien language" is a must. Whether it's SAM (which should apparently stand for Swiss Army Mind) or another device, this is something that fans can generally accept if it's dealt with even in a small passing way, i.e. a "universal" translator. It's something like a reader or viewer can forgive the "sound in space" thing for dramatic effect. That said, it was established fairly early in the game that the Kett had found MW species and were already conducting experiments on those they captured. Later in the game we even get audio bits of humans trying to communicate with their Kett captors at various points. The Kett could have plausibly gotten a firm grasp of many human as well as other MW languages from lab study. The Angara? It's a plothole that they had enough one on one exposure to humans to get that opportunity to learn, then translate if we don't take the "universal translator" that is SAM into account. A possible similiarity to remnant language could make the learning curve plausibly shorter.
