Does the original trilogy have a story and characters good enough to stand up to the Witcher and Horizon Zero Dawn? Should we push EA to make a remastered version? Should EA wait until the next console generation for a remaster?
China has a thousand ridiculous censorship laws for video games. Should a censored version be made for that market? Should Uzbekistan be given the chance to experience the Mass Effect story?

Yes.
No. They should continue to move forward with the Andromeda story now.
I think so. A remaster of the OT should wait until after another instalment of Andromeda. If that instalment takes us back to the Milky Way (as Mac Walters hinted before Andromeda's release), then the release of a remaster of the OT would help refresh the OT and, potentially connect it in a more logical fashion to Andromeda's return.

My opinion and it could be the same from EA is that touching the original games is like running with nitroglycerin its extremely volatile and could explode with very little disturbance. I think for the foreseeable future unless the way the people react changes to something they don't like, the best we are going to get is making older versions work on the newer hardware. EA has the original trilogy working with EA and Origin Access, while Sony ruined it for their customers by claiming EA Access was a poor value for their customers and told EA no.
As far as waiting, I think as I mentioned above its going to rely on people changing and not console hardware. I can see a lot of areas where people are just going to erupt because EA changed or didn't change something in the games and how "easy" it could be for them to do it because all their fans feel the same way about those changes.
Censorship even if it is self imposed is problematic and there is no guarantee that the game would even sell in China. The box of worms having a censored version for China is the people here would want toggles for the content they don't like since they have asked for it in the past to protect them from the horrors of a SJW agenda towards same sex content BioWare has.

Getting an updated trilogy would be interesting, but my belief is that they should only be able to tart up the game and add new content. No removing content that doesn't work with future games, no retcons, just new content. For example, Ashley in ME3 is barely functioning, so if she had more content then that'd be awesome.
I'd also be fine with ME1 & 2 getting updated to ME3's combat. But ME3 would need to get the ability to stow your weapons like ME1 & 2.

I wouldn't mind a remaster of the OT.
At the same time, I wouldn't mind seeing more Andromeda games.
I'm not big on them milking Shepard and the Reaper story though, as many have expressed the desire for it to continue. The trilogy technically concluded with ME3.

yes and I know many fans would love to see a more seamless gameplay with all three Shepard Trilogy games.
If they do a soft Reboot, they should make a solid plan that goes into Post Reaper War and a solid ending to the Reapers without relying on the Starbrat. Personally I don't mind if they take Liara and make her a villain.

I'd also be fine with ME1 & 2 getting updated to ME3's combat. But ME3 would need to get the ability to stow your weapons like ME1 & 2. Yes and no. I like ME1's leveling system way better. It was somewhat restored in MEA but I'd prefer to have to carefully choose what skill/power/tech abilities I want to upgrade rather than just a few where in some cases I'm not even sure it makes much difference. I really notice in ME1 when I have to bring Tali along to hack some things instead of any random squadmate like in ME2 and ME3. That's because Tali tends to be better at that (as is Kaidan, if you properly upgrade him) whereas Wrex and Garrus are useless in that respect. More RP is better. As far as combat system, yes, the ability to climb up onto things or leap over them in ME1 would be outstanding. Also, Vanguard is almost an entirely different class in ME1 than what we have in ME2 or ME3. I almost an that upgrade that includes Biotic Charge could be something gained after the Rogue VI mission.

As long as we can still play the games they're still alive. I worry that trying to bring them "up to date" could end up ruining what made them special. Especially the first game, which has a special atmosphere that gives it a different feel to the others.

if they did a con current Shepard Milk way galaxy, I would like an Different PC than Shepard. For example, Turian Blue Suns merc with a batarian heavy engineer, or a Geth Hunter with a Geth Engineer buddy.
As much as I would love a Cerberus Phantom as a PC for a Con Current Mass Effect that leads into a Post Reaper Galaxy, I just want a good mass effect game.

Personally, a remastered trilogy would do nothing for me. I'd prefer new games with protagonists that aren't Shepard to flesh out the Mass Effect universe more, whether that means sequels to Andromeda with Ryder, or some way of returning to the Milky Way.

ME1 is probably the only one worth remastering at this point if they were able to upgrade the graphics and combat system to something closer to ME2/3. The latter two still hold up well enough unless you're going to make them into something that could only be played on the highest-end systems anyway.

I'm not big on "remasters" but I do think they should bring the franchise back to the Milky Way. I'd like to see a title set during the First Contact War and humanity's coming to terms with not only not being alone, but being only 1 small part of a very large, very old galactic community.
I think the original world Bioware built is fleshed out enough and complex enough to the point where they can write solid stories that do not depend, either directly or indirectly, on Reapers. I'd love to play a straight-up human N7, or a Turian fleet commander, or a Salarian STG operative... There's a LOT of possibilities.
I understand that a post-ME3 title would be impractical as ME3 conclusions leave way too many variables, but there's a lot to work with as "prequils."
That's just my 0.02 USD. Your mileage may vary of course.

Andromeda is pretty much dead so I wouldn't let that factor into things at all.
For my two cents - yes to a remaster, but stick to the visuals etc and don't go dicking around with the gameplay.

I want the entire Trilogy rebooted as far as storytelling and plot consistency is concerned. It has so many errors to the story that it should have been rewritten, like how Shepard's death in ME2 makes no sense other than the ressurrection plot device. And they should've give Shepard to have character development because Shepard is dry, and boring, and no depth whatsoever. Take Lee from the Walking Dead as an example of character growth.
