The same action isn't substantially morally changed by altering the character's sexuality. I'm not sure how there's any question to it. Are you asking if people would still want the options despite flaws? If that's the question, then sure. It's not like the bi/gay options are currently flawless.

No, but it can give it different context; King Alistair's need for an heir and the Dark Ritual both focus on heterosexual breeding. Likewise, several LGBTQ posters here are admittedly no fans of organized religion, so having a partner that puts God above them might have different interactions.

I mean, I'm not into either of those things. lol I don't think being gay is that relevant to it. Alistair needing an heir doesn't practically effect someone playing a dude differently than someone playing a female non-noble human. Lots of gays are religious and lots of straights aren't. I think nothing much changes by swapping gender availability. Honestly, the only character I can think of that would need a complete character arc overhaul to work the same bi would be Dorian.

Grey Wardens have low chances to get children the longer they are grey warden worse it gets, and Alistair has been single for 10 years if you dont romance him. If Bioware just ignores this and decide to give him a biological child is just lazy writing imo. In the case of Alistair being bi, he has proved himself to be a different king that change things for the better, so it would not be surprising seeing him naming an heir that is not of his blood.
Gay kings and queens are valid.
And Gaider considered doing blood magic for the dark ritual for female wardens, I read it somewhere, sadly I dont have the receipt.

It's not likely that Alistair will produce an heir to begin with. So if he were bisexual and insisted on having a male Warden of any background relegated to "royal mistress" status, I'd be annoyed but I would have played it through with gritted teeth just like I did with Lady Aeducan. It would have been awesome for them to allow Alistair to stay with a non-human female Warden and even more so (for me) to have him available for m/m content. And, honestly, given my total lack of interest in Zevran at all, my canon Warden would be King Alistair's side piece if he was allowed to be. - We already have to deal with that with Morrigan. If you are anything other than a straight guy romancing her, she presents you with a "have or facilitate hetero breeding with me" scenario. If she were bisexual, it would be no more frustrating for f/f PCs than it is for m/m PCs who are basically told, "I know you are gay but you need to do this anyway and, don't worry, Zevran would approve". - I don't see any issues with Sebastian or Cassandra's content being open to s/s content. We certainly haven't had any overtly religious or celibate romances for s/s options, so I don't see how his/her sexuality would make a difference. - I would actively have enjoyed having Blackwall's romance arc for m/m PCs. I see no issue with his storyarc at all. In fact, I ended up romancing him with my female Cadash Inquisitor, despite creating her with the intention to have her romance either Sera or Josephine. Blackwall's story was fascinating to me.

Because I'm really not familiar with dwarven lore and the one thing I do remember is that there are arranged (hetero) marriages going on. But dwarven nobles is good too bring it.
