Question: How viable is it to just play this game in free-to-play mode and treat it purely as a single player game, only wanting to experience the story and ignoring most of the MMO stuff?
If I were to attempt it would I discover that most of the game is absolutely brutally hard and almost impossible to survive without being in a well-geared group, and paying attention to all that spreadsheet min/maxing, meta, best in slot stuff that usually goes with MMOs?
Is it possible to level without hours and hours and hours of ceaseless grinding?
Or is it fairly simple to level up a character entirely solo without needing other players to help me?

I don't know how many bells and whistles just the FTP version is. But I can say that Just playing the levels 1-50 class stories (which are all aimed at single-player) kept me busy for a couple of years. And there are single-player versions of most of the older Flashpoints now (which was originally single-group content) Basically ignore the quests that are labelled "Heroic" unless you are well-geared or very high level, as those are aimed at group play.

Free-to-play players are limited to the story content they have access to, it ends with Shadow of Raven (max level 60 I think) and you don't need to min/max gear to do the content for it. Min/maxing is reserved for max level (80). You will level up as you do the story content, no need to grind unless you want to level faster than required. I think FP2 have to do the side quests (purple quests are the main quests that gives the most XP, yellow quest are the side quests). I have never been F2P so I don't know exactly. Veteran/Master Flashpoints, Uprisings and Operations (aka Raids) are group content. I don't do them, you don't have to do them either. Story Flashpoint are soloable (with AI companions) and story related (mostly, I'm still wondering what is the point of Directive 7). Heroics + 2 are soloable with your AI companion, but some are a PITA (they are badly balanced). They aren't super important to do, but give nice XP if you need some more. I only play solo and I have zero issue leveling up characters.

In fact, too easy. Once upon a day, the boss fights were challenging. Then they dumbed it down to LOLEZMODE. But I haven't played it in last 2+ years, so balance might have changed (I've heard companions aren't as OP anymore).
Basically, GO FOR IT. In fact, I think just playing the 8 stories solo (yes, you want to solo these) is THE way to play. Ignore the grind, and the compulsion to max out the bazillions of achievements (but do try the datacron hunts if you like platformer run/jump puzzles at all!). Just enjoy the stories. Highly recommended!
You don't need a sub, though buying it for one month ($15) will get you a bunch of useful QOL perks. You don't need 'em, but you'll appreciate them.

But I haven't played it in last 2+ years, so balance might have changed (I've heard companions aren't as OP anymore). 7.0 downscaling broken balance reduced companions efficiency or increased damage/reduced defense. Nobody is quite sure what is going on. There is a range of level where you get extra damaged thought. I had 15k repair bill during that time when doing one planet weekly heroics while once I reached level 80 my repair bill for the same weekly heroics is around 2k which is the normal amount. And that was on a tank build. My DPS characters are feeling extra squishy in the level 50-70 range doing level level 30 content too (I don't have any at max level yet, I keep making alts ). The companions have issues keeping up sometimes. But it's mostly affecting Heroics, not the class story quests. Actually, some class story quest feels easier than the planet solo content around them. It's a bit weird.

I've created an account and installed the game, and also bought a handful of Hutt Cartel coins just so as to remove some of the more annoying restrictions such as limited credits etc. So I'm good to go. Think I'll make a Jedi Sentinel, as that's what I play the majority of the time in KotOR 1 and 2, so it's familiar and comforting to me. Just need to finish current playthrough of KotOR 2 first, as I want to experience the stories in the correct order.

You haven't experience such total anguish (and eventually, elation) as when collecting the Makeb endurance datacron
I spent a good two weeks choosing between Sentinel & Guardian. Eventually the latter, and Guardian continued to be my go-to default for years. FYI, Sentinel is a dual-saber wielder. Though I understand now with 7.0 you can make crossover characters that have styles of other similar classes (i.e. force-wielders), so you could even play as a Shadow/Sage.
Key point is that both Sentinel and Guardian share the same Jedi Knight class story. This has been called KOTOR 3 since it is the most similar in character and spirit. Consensus SWTOR favorite is the Imperial Agent, but obviously subjective. Other often mentioned favorites are the Sith Warrior, Inquisitor and Knight (though the latter has almost as many detractors). I think all eight are worth playing, though don't expect any to match the overall quality of KOTOR (little does!).
I envy you for getting to experience them for the first time, enjoy!
BUT FIRST: Read SWTOR:Revan! And I'd also recommend following on with Deceived. THEN play the game!

Sentinel in KOTOR was a roguish Jedi, Sentinel in SWTOR is a dual wielding DPS version of the Guardian. If you want a roguish Jedi, you want Shadow/Assassin, but that means using double bladed lightsaber. Also, to follow the story in SWTOR in the correct order you probably want to keep this nearby. As a F2P, you'll stop at Ziost, but you'll be able to experience the entire Revan story related stuff. Note that it shows the Operations (raids) paths, you can ignore those. I would also suggest jumping from Makeb to Forged Alliance. Seeker Droid/Macrobinocular are side activities. The Czerka flashpoints don't have solo version and CZ-198 is a daily area with zero story. All the flashpoints outside the main line don't have story mode (solo version) and aren't part of the main story anyway.

The Jedi Knight storyline focuses on swashbuckling high-adventure, saving planets from exploding and such.

I think your link was supposed to go to one of the SWTOR storyline chronologies, if you want to correct that. Here's one I quickly found (SWTORISTA is one of the main go-tos):
My take is similar to azarhal's, but first, I'll again stress: Don't start the game yet. Definitely, DO read SWTOR: Revan. Can't stress that enough! And I'd strongly recommend doing same with SWTOR: Deceived.
Then, looking at the chronology, and following on azarhal's comments, do feel free to skip: The Planetary bonus quest series' (note 1) FP: Directive 7
The Black Hole Macrobinocular & Seeker Droid Quests CZ-198 Oricon (actually, a great story, but you won't finish it unless you group for the Op at the end)
One might argue Section X is unnecessary, especially as it is part of the Oricon arc. But you may want to do it for the "treasure hunt" (I won't spoil it more for you)
And no worries about F2P access stopping with Ziost. IMO, the stuff after is garbage, and I'd argue you may not have wanted to do on your main anyway.
[Note 1: Each planet has both part of your class story, and it's own shared (one Rep, one Imp) story. The class story is obviously mandatory, the planet story isn't. But generally are worth doing once per faction. Most planets also have a bonus story questline that opens after completion of the main planet story (at least originally, some were level-triggered so you'd come back to the planet). I'd say these are all optional. I barely recall most.]

If you choose to play as a Sentinel, do not use the "Combat" Combat Style. The DPS of "Combat" is horrible bad since 7.0. The Same with the Sith mirror "Carnage"

Also, to follow the story in SWTOR in the correct order you probably want to keep this nearby. As a F2P, you'll stop at Ziost, but you'll be able to experience the entire Revan story related stuff. Note that it shows the Operations (raids) paths, you can ignore those. I would also suggest jumping from Makeb to Forged Alliance. Seeker Droid/Macrobinocular are side activities. The Czerka flashpoints don't have solo version and CZ-198 is a daily area with zero story. All the flashpoints outside the main line don't have story mode (solo version) and aren't part of the main story anyway. I think your link was supposed to go to one of the SWTOR storyline chronologies, if you want to correct that. Here's one I quickly found (SWTORISTA is one of the main go-tos): Thanks, I fixed it. You don't need a sub, though buying it for one month ($15) will get you a bunch of useful QOL perks. You don't need 'em, but you'll appreciate them.
From what I've read (haven't got around to doing it yet), if you want to make PCs of the various non-free-to-play alien races, you can sort of use this too. Once the subscription ends, you can't create new characters of races you haven't unlocked, but can play any existing ones you've made. So it sounds like you can create any other characters you might want later during that month, and play them when you get around to it.

Ossus and Onslaughth (6.0) is good content and has a different story Republic and Imp side.
