So I'm playing Noveria again, and one thing that's always bugged me is that none of the crew recognize the rachni. I know the Rachni Wars were thousands of years before the events of ME1, but surely there are pictures of the rachni? And that they would have learned what they looked like in school or something. Especially Liara, Garrus, or Wrex. Thoughts?

You figure Wrex for sure since they love their war stories. Although maybe the Rachni wars are just a footnote now in galactic history?
Although it is annoying that no one (including Shepard) knows what a Rachni looks like, but we the player do because we already got a codex entry with a picture of a Rachni when we talked to Avina at the Krogan Memorial on the Citadel.

For the record: I do find it annoying as well.
But one the human's "great" talents (depends of course) is to to think of any explanation, find something rational as it always comes down to "it can't be".
Anyway: one of that explanation for ME characters is - it can't be as the rachni is dead, killed, annihilated, burned etc. There are still surprises in the Galaxy, not everything is known, explored. Thus those bugs just belong to some other unknown species, maybe some rachni relatives.
But you just can't get rid of the thought those bugs do look like the rachni, but at the same time you know according to the history and some data they should be dead. And we simply get confusion in minds till learn the truth about the egg.
Annoying? Yes. But in some cases still try to find some explanation of game flaws or whatever. Help keep playing with sort of serinity in mind.

It's like with the quarian appearance. It's also a little silly that the rachni are referred to as such in the hud/names; it kind of spoils what's happened.

Yea, also, does it actually serve a real purpose in the plot? I mean, IIRC we find out what they are after our second encounter with them or something like that and there really is no plot development in that time. So what is even the point of keeping us in "suspense" there, given that it really doesn't make sense. Same with the quarians btw. Not knowing what they look like under those suits has no relevance at all as far as I can see.
