There seems to be some conflicting information. I could have sworn I read on IGN that all romance-able characters were open to you, regardless of which gender you pick. But now I'm reading that's not the case.
Personally, I always wondered why Bioware artificially restricted romances, so was thrilled when I heard the field was completely open. Now I'm bummed that that may not be the case. Nothing worse than your romance option only being open to the sex you're not playing as.
Is there a definitive answer either way?

Bioware has confirmed that not every love interest will be available to you regardless of sex. Some will be available only to Scott, some only to Sarah, and some to both.

If I recall correctly, back in the day there was a lot of talk after DA2 came out about how unrealistic it was that every romanceable character would not have a sexual orientation of their own and would just totally be into you no matter what. It seems they agreed with that philosophy and I guess I can't blame them. I do kind of like how in DAI I have to get out of my comfort zone of playing a female human to romance guys like Dorian, and Solas. Especially Dorian because I almost never play as male in games where I can choose to play as female.

That character was arguably the one I enjoyed the most as well.

Pressure from certain members of the community who complained that it was bisexual-erasure(even though two of the romances were clearly bisexual). So to avoid more backlash from that part of the community, they changed the two romances whose sexual orientation was left ambiguous into just bisexual. It was stupid and still makes me sad.

Everyone draws their own lines in the sand where to call bullshit and enforce realism. BioWare chose to adhere to the line that yes, in real life people tend to have set orientations be they straight, bi, or gay. In other areas they just went with what was cool or easy. Like... characters wearing belly shirts in hostile alien environments. *cough*Peebee*cough* I would have preferred the opposite, but there is nothing that makes my lines and better than anyone else's.

I don't know I kind of feel this is a slippery slope, in so much that if for example straight men have 3 options, straight women have 3 options, and gay and lesbians have 2 or however it works out, and 3 of the options for men and women are squadmates, and all gay and lesbian players have are crew members or NPCs, then there is going to be a certain amount of backlash from whichever group have the inferior number and or available characters to romance. I just can't see BioWare serving everyone equally in terms of romanceable characters by choosing not to have the player sexual approach.
I see the positives to not having it be player sexual, but like in the original trilogy, there is always going to be one group who arguably get the better options, and thus to experience the better options, players are forced into playing a character whose sexuality is different to their own.
This is all currently speculative at the moment, as we don't even know the full group of squadmates yet or who are available to who as romanceable characters, yet I'm still concerned that one group are going to be favoured more over others, rather than everyone whether straight men, women, bi, gay or lesbian gets an equal amount of options of decently written character romances.

That is why all being bi or something like that is still my favorite approach. Everyone has the same options and plot characters can be romanced by everyone, all the other companions and npcs could have different sexualities and that way everyone wins. After DA:I and ME 3 I really doubt the lesbian and gay romances are going to be npcs, I mean Sera was an awful companion for the first lesbian romance and almost irrelevant because it was the only you could kick out of Inquisition, by optional dialogue. I still like to think they will be doing the bare minimal, that is having one companion for everyone. If not I will be highly disappointed on principle alone.

I think in this case it was a good choice to get away from that in order to create a world where each NPC is their own person. It helps rather than their sexual orientation being responsive to whatever the PC is. In general a believable world can be a very important thing in a RPG. I know that some people will be upset that they can't romance the person that they want and it's understandable, but that happens regardless so it's not like they're avoiding that happening by making every option player sexual. I never got my Kasumi romance regardless of broshep or femshep =P

According to Gaider when talking about it, during DAI development, it wasn't either because of realism or backlash from part of the community. DA2 was the first step of having multiple romances for everyone. They went to the all bisexual/player sexual route because it was a compromise between that goal and the limited the resources they had (considering DA2 was on a year development, I can believe that). It's also clear from the fact that Sebastian, with the dlc, wasn't made bisexual. The Same happened during DAI, when their original approach was a 2/2/2 division, and when they got the one more year of dev time they didn't make two bisexual LI, male and female, but two LI for straight women, with race hating on top of that. Their goal was never to make all romances available to everyone, but increasing the number for everyone, and their approaches varied based on the resources they had.

At this point I will be happy with two straight and bi(or anything on that spectrum) and a gay and lesbian companion. I really do not care if MaleRyder or FemRyder gets more NPCs or one more companions. I am lowering the bar to equal opportunity and better representation, not really for wanting to romance this or that character. After Sera I take anything really, it cannot get worse than that.
