I love the SJW undertones some fans have when suggesting there are problems with humans being so special, as if they think it's an injustice some make believe race of aliens isn't a focus. Give me a break lol

Give me a break lol It gets pretty carried away when the setting then establishes that humans, a race that has not existed as long as, say, the salarians, are somehow more diverse genetically than everyone else.

It's a common trait given to human in many science fiction games : they have no special abilities but they have more diversities than others and/or are more adaptatives.

Particularly odd since humans are on the low side of genetic diversity as far as Earth species go.
Of course, the real reason is to try and give some cover to the weak character creation for nonhumans. If the lore says that humans are genetically more diverse than asari et al, then the relative lack of variation in their appearances in-game is superficially plausible.

Compared to humans, I suppose the other species are as genetically diverse as cheetahs.

Shot themselves in the foot. No one to blame but themselves. Just take responsibility. It's like they're doing it on purpose to deliberately screwing it up, and it's no wonder that people left before the game's release.
