So will we be getting Varric back? Plus good news about dorian.

It's one of those creative dilemmas that may not have good answers - do you spoil character appearing at the very start of the game, or do you keep it a secret, but make it a little anticlimactic, because the first time we see them is not a reveal scene, but a character creator 

The good thing about Inquisitor is that featuring (and designing) them at the beginning of the game makes sense, given that they're the heroes of events that need to be recounted for Veilguard to make sense - but that doesn't mean that they'll be present from the start; we may start with them, or they may as well show up halfway through the game. It's hard to tell at this point.

I'm receptive to the idea that Varric is the default character accompanying us to the ritual site to stop Solas, but perhaps we'd be able to replace him with Inquisitor - however, I don't really want to convince myself that it'd indeed happen. Gotta wait and see what they have planned. 

Well... what? Varric has already present in many more promo materials, including a reveal trailer and gameplay reveal seen by millions of people. It's an entirely different scale.
