As far as I recall, there were only two love interests, the other were just casual encounters. But yeah you'd probably have a bit of problems with the completionist part.

The Witcher games were always kind of relishing in immaturity at least until Witcher 3 when it came to sex and romance. I did like Geralt and Triss's relationship in TW2 though, just maybe not the awkward softcore scenes with Harry Potter music over them.

I can see them doing that. For example like if a Salarian is a LI. Or if there is a synthetic who experiences that desire, sort of like EDI with Joker. 
For cases other than that, it could happen depending on their orientation or preference, like say a character who would prefer to wait for marriage or something.

Oh, I'm not worried there won't be any options for that at all, since a couple months ago Mike Gamble answered this on Twitter:

My hope above is just that those kind of romances wouldn't be limited just to the light ones as the articles refer to them. To use Mass Effect so far as an example, almost every single romance in the Shepard Trilogy have had sex be mandatory either as an ultimatum of "have sex or end romance" or just assumes for you and makes it so. The only exception to this was Kelly Chambers, whom the writer did the same as DAI did with Josephine and Solas and left that part up to interpretation, and for those who romanced Kelly definitely drew the short straw like for example she being the only LI who had no content in the Citadel DLC. So I'm just hoping that that won't be the case again. Between the overall positive response to Bioware's doing this in DAI, the DA team expressing a desire to continue, and the things said for MEA so far it seems like that won't be the case, so that's good. 

I am really interested in the out-of-party romances, because that's imo the best chance to meet a larger-than-life characters from the setting and have a whirlwind crazy affair, not going on the rails of going on a date, then getting married after an FTB a-la-SWTOR. I just want a cool fun stuff, nothing like real life, so the romantic story itself is dressed up as an interesting adventure worth participating in.

Hopefully more than just human and asari options....as well as male and female aliens.

In the next update, we learn that Ryder can romance a hivemind alien species. But you can't love just one segment without loving them all...

Can't we just be friends? Biggest disappointment for my femshep was having Jack assume it was sex or nothing. No option for friendship.

Why I have feeling that the character I like the most will be just light romance.

That is the thing, I think for the game this size, it would be rather effort consuming to include 10 serious romances and ~30 fling options, so that each feels believable /non-trivial.

Like Aveline and Cassandra (if rolling a female Inquisitor). I enjoyed that dialogue.
